Khichdi is India's original healing food β given to the sick, the recovering, and the young. But the typical khichdi is a carb bomb (80% rice). This version flips the ratio: moong dal dominates, vegetables add fiber bulk, and a Spice Pharmacy tadka turns comfort food into specialized nutrition.

- βͺ 1/4 cup Brown Rice or Quinoa (soaked for 30 mins)
- βͺ 3/4 cup Yellow Moong Dal (split green gram)
- βͺ 1 cup Mixed Vegetables (carrots, beans, peas - finely chopped)
- βͺ 1 tsp Ginger (grated)
- βͺ 1/4 tsp Turmeric powder
- βͺ Salt to taste
- βͺ 3 cups Water
- βͺ 1 tbsp Pure A2 Ghee
- βͺ 1/2 tsp Cumin seeds (jeera)
- βͺ 1/4 tsp Fenugreek seeds (methi dana)
- βͺ 1 pinch Asafoetida (hing)
- βͺ 1 Green chili (slit)
- βͺ Fresh coriander (to garnish)
π©βπ³ Let's Cook (Step-by-Step)
- 1Prep: Wash the rice and dal thoroughly. Soak for 30 minutes.
- 2Boil: In a pressure cooker, add the soaked rice, dal, mixed vegetables, ginger, turmeric, salt, and water. Cook for 3-4 whistles until very soft and mushy.
- 3The Tadka: In a small pan, heat the ghee. Add cumin seeds and fenugreek seeds. Let them crackle. Add hing and green chili.
- 4Combine: Pour the hot tadka over the cooked khichdi. Mix well.
- 5Garnish & Serve: Top with fresh coriander. Serve hot!
